This easy potato recipe comes with choices from eating cold to hot and from perogy to dill herb flavour. Also think potato chips! This dish can be eaten right away or prepared ahead of time – two to three days. It is kiddo friendly as well as a soft food. And yes, you can freeze this dish and heat it up at a later time (do not freeze in metal containers).
Let’s name this recipe ‘Dill Yoghurt Potato Casserole‘…currently no recipe found on the web (in English). Time for something new. A peeling we will go.
Take Note: Leftovers store well if not contaminated and your refrigerator is cold enough – ask me about my butter cream icing that was 3+ years old. What else was on the serving spoon? Also, the temperature of the fridge makes a difference – some foods like it colder. Keep your leftovers under wraps as molds can lurk in the fridge – a check and clean of the fridge regularly is recommended.

Hot potato is a game whereas this is a yummy nutritious comfort food. After you prepare it just put the dish in the oven to keep warm or a little higher temperature to crisp the top. To crisp the top, you may wish to put some butter on the top with or without some cheese (pick and choose from a variety of cheeses).
Easy Potato Recipe – Take the Cold Plunge
This delicious dish can be served slightly warm (just made) which makes this dish very versatile. Let it cool down and voila, it as a potato salad…just add/toss egg in the last mash/mix and voila, a more traditional potato salad.
In potato salads, there are often some chunks. Let’s add another option into the mix…mash lightly or rather fold with a wooden spoon the other ingredients into the potatoes. Want fancy, split the cooked potatoes into two and have one mashed while the other half is left as chunks. Mashed on top. Are you thinking what I am thinking…Shepherd’s Pie? Add a layer of peas (vegetables). Add a layer of ground beef.

I am reminded that not every food goes together. There are themes to dishes and blends of herbs and spices. Most kids have simple tastes when young until they develop their taste buds for spicy and textures for liver (if they ever do). Reminded that not all adults have a love for all foods either.

The amount of total carbohydrates of a medium potato is 26 gms…that is high for those who have diabetes but because of the fiber and added fats, it can be healthier and a little amount of enjoyment goes a long way. The best way to approach eating potatoes is in moderation and with real butter or truly cold pressed olive oil (not margarine or butter substitutes). Best to eat potatoes and leave out the desserts. Isn’t mashed potatoes a dessert!!! These were my friends when I was pregnant.
Easy Potato Recipe
- Approximate 8″ x 8″ (20cm x 20cm) casserole dish
- Potato masher
- Pot to boil potatoes
- Pan to sauté vegetables
- Bowl or use pot to mash the potatoes in
- Measuring cups
- Other items like a fork to check when potatoes are ready
Ingredients
Gotta adore this simple easy to make potato recipe that is good with approximate measurements – plenty of room to play. For the basic flavour version, follow the instructions below. Check out the suggested flavours, but there will be more creations to explore.

- 2 pounds of potatoes, and the kinds are up to you
- 2 tbsp. or 30 ml Butter, salted
- 1/4 cup or 67.5 ml Yoghurt/sour cream (play with what you have in the fridge, a combo perhaps)
- 1/2 cup or 125 ml Onions, chopped
- 1-2 cloves Garlic, minced (substitute with garlic powder, 1 tsp or 5 ml)
- 1 tsp Dill herb – fresh or dried (use double or triple if using fresh)
- Pinch of salt (optional as there is some in salted butter)
Double the recipe should you wish to make more and use a larger pan.
Instructions for Easy Potato Recipe
As easy as one, two, three. Cook, mash and serve.
Step One
COOK Boil the potatoes and sauté the onions and garlic in a separate pan. Cover the potatoes with water, salt or no salt. Turn to medium-high heat until water is boiling then turn down to med or lower (depending on the pot and burner). Cook for approximately 20 minutes or until fork tender. Drain the water (keep if you wish for soup and such.) To sauté the onions and garlic, heat up some butter in a frying pan on medium to medium-low heat, cook until tender (10-15 minutes).

Step Two
MASH Add the butter and mash well or as much as you like it. Whip if you wish to use a mixer (may want to add the yoghurt at this stage). Add the yoghurt and mash until mixed. Add the sautéed onions and garlic and mash until mixed. Add herbs, salt or other seasonings. You may choose to add some of the herbs to the top of the casserole.

Step Three
SERVE After the mashing, put in your serving (casserole) dish – fancy or not, it will be tasty. Serve immediately or let it cool down before you put into the fridge.

Variations
This is where this simple potato recipe gets adventurous!
Pierogi…sauté only onions, swap yoghurt with cheddar cheese. Top with a layer sour cream (substitute with cottage cheese.)
Spicy…add some spicy spices such as paprika, cayenne, jalapeno, etc. With this, you can add the spices/herbs to the sautéed veggies just after they are tender and before adding it to the mash. With any combo of spices, should add up to 1 tsp in total to start. Taste and add more if you wish.
Yoghurt and chives…sauté chives (maybe with onions) but add at the end, just enough to heat up the chives but not brown them.
Salt and vinegar…besides adding some vinegar (apple cider or malt vinegar – boy oh boy there are plenty of vinegars to select from) into the sauteed veggies at the end, add a wee bit more salt too. Taste the veggies to make sure you have a strong and balanced flavour because you are adding it to the main ingredient, potatoes.

BBQ…if you have some dehydrated tomatoes (1-2 tbsp or 15-30 ml), grind them up, add a pinch of paprika, garlic powder, onion powder then add this to the mash like you would the herbs. Begin with using 1/2 tsp of the powders, taste and add more if you wish. Use salt that has been smoked.
Ketchup…same as BBQ only add some molasses and remove the onion and garlic powder.
Additional Recipe Ideas
Honey and mustard…add honey and mustard to the sauteed vegetables. May I suggest you do two layers for this one. One half mashed well and one half in chunks. It is up to you on which half you add the honey and mustard. May wish to drizzle some honey on top before crisping in oven. Remember, nothing is in stone, unless you use stone bakeware as your casserole dish.
Sweet and Sour…here is where fruit can be added such as pineapple along with some tangy tomato sauce (think pizza toppings)! You could add some sausage/meat too. Did I already say there was A LOT of choices?
Pesto…add a layer of pesto between two layers of mash. Potato Pesto Potato…with a little cheese on tip, crisped in the oven.
Truffle oil!…drizzle some fancy oils once the veggies are tender. Once again, be sure the taste is super flavourable because it will be cut with the potatoes.
Dinner without the bread and pasta!
