Lime Mint Smoothie is meant to be a refreshing delicious nutritious Summer drink!  The citrus fruits come from somewhere other than my backyard but the Mojito mint grows well on Manitoulin Island.  It goes without saying the coconut comes from another part of the planet.  The eggs could come from your own chickens or in my case, my sister and duck eggs from friend…local local.  The yoghurt and sour cream, I make from fresh raw milk…a blessing from a farmer local to Ontario. The ginger…I hope to grow myself next year. And for a sprinkle of ground cinnamon, I have yet to find some plant that tastes as lovely as this spice does.  The added sweetness (optional) comes from dark maple syrup which a Manitoulin local (many actually) does with all his heart…sweat and joy.

You take the lime and the coconut and add it to the blender!

Prenotes for Blending Your Lime Mint Smoothie

  1. Substitute the water with mint tea or coconut water
  2. Just use a whole lemon so you don’t have any leftovers
  3. Juice the citrus fruits for a different outcome, sweeter taste but less fiber/bulky
  4. Use more or less mint or change the mint up…chocolate mint anyone!?
  5. Substitute the coconut milk powder with a nut milk or eliminate it as some are sensitive to coconut or perhaps you just don’t have the ingredient in your cupboard – may use some good protein powder as well
  6. Maple syrup is optional and can be added to the individual servings in case someone wishes no sweetener
  7. Add a frozen banana for sweetness instead of maple syrup
  8. My dairy comes from raw milk products but yours will be your choice
  9. Cut the recipe in half

Nutritional Values

All of these ingredients do have nutrition value. Such as limes are rich in Vitamin C.  Mojito mint is low in calories but most importantly it is a superfood rich in Vitamins A, C and Bs, and rich in the minerals iron, potassium, magnesium, calcium and phosphorus.

Eggs are a highly nutritious food rich in protein, vitamins and minerals, such as selenium and iodine.  The teachings say that eggs are a perfect protein.

Lime Mint Smoothie

Approximately 4-6 servings

Ingredients

2 cups or 500 ml yoghurt

1 cup or 250 ml water and/or ice

2 tbsp or 15 ml sour cream

6 tbsp or 75 ml coconut milk powder

4 sprigs (approx. 12 leaves) fresh Mojito mint leaves

1 tsp or 5 ml roughly chopped fresh ginger or 1/2 amount if using ginger powder

2-4 tsp or 10-20 ml maple syrup (optional)

2 eggs chicken or duck (optional)

Citrus

2 limes, 1 orange, half lemon – juice or whole fruit peeled then chopped

Garnishes

Sprig of mint

Slice of fruit

Sprinkle of cinnamon powder

Instructions

  1. Add the first seven ingredients to a blender.
  2. Juice or peel the citrus fruit [or if adventurous peel the fruit with a sharp knife in order to benefit from the pith, the white spongy part between the peel and the fruit]. I add a little of the peel for the citrus oils but you choose. Quarter and cut in half (8 pcs) for each citrus fruit. And if you do not have one of the citruses then double another…play with what you have on hand. When done add the fruit pieces into blender.
  3. Blend on high for one minute or until smooth.
  4. Add two eggs and blend on medium for approximately 10 seconds.
  5. Pour into glass and add your favourite garnish(es).
